<strong>Ingredients </strong>(for around 20 madeleines):<br />
- 2 eggs<br />
- 100 gr of sugar<br />
- 100 gr of flour<br />
- 1 tablespoon of baking powder<br />
- 50 gr of butter<br />
- 1 pinch of salt</p>
<p>In a bowl, mix eggs, sugar, flour, baking powder, butter and salt together. You can melt the butter to make it easier to incorporate in the dough.<br />
Put the preparation in the fridge for 30 minutes, so the madeleines will rise better.<br />
Put the dough into madeleines tins and cook in the oven for around 15 minutes, until the madeleines get a goldy color.</p>
<p><em>Tip</em>: add some orange blossom, lemon or vanilla flavor to change the taste of your madeleines.</p>

<strong>Ingredients </strong>(for 4 people):<br />
- 4 eggs<br />
- 1 teaspoon of vanilla<br />
extract or vanilla leaf<br />
- 80 gr of sugar<br />
- 1 teaspoon of vanilla<br />
sugar<br />
- 1/2 litre of milk<br />
- Liquid caramel</p>
<p>Boil the milk in a saucepan with the vanilla extract or the vanilla leaf. When it is hot, mix it with the sugar, the vanuilla sugar and the egg yolks (but the white eggs aside). Leave this vanilla sauce to cool for around 1 hour in the fridge.<br />
Beat the egg whites until they become stiff. Put them in the microwave for 1 minute at medium power. When they are cooked, put them to cool in the fridge.<br />
Put the cream in a glass and add a piece of egg whites on top to serve. You can add a dash of caramel for decoration.</p>
<p><em>Tip</em>: put some <a href="http://myfrenchcooking.com/2013/04/05/chocolate-mousse/">chocolate mousse</a> on the bottom of a glass, then pour the vanilla cream and add the egg whites for an elegant effect.</p>

- 100 gr of pastry dark chocolate<br />

<p>Break the chocolate into pieces and melt it in a saucepan with 2 tablespoon of water.<br />
In the meantime, beat the egg whites with a pinch of salt (we will not need the egg yolks).<br />
Mix delicately the chocolate with the egg whites and pour the chocolate mousse into glasses. Put them in the fridge for at least 2 hours.</p>
<p><em>Tip</em>: try it with milk chocolate.</p>

<p><strong>Preparation time</strong>: 5 minutes<br />
<strong>Cooking time</strong>: 10 minutes each<br />
<strong>Difficulty</strong>: Very easy<br />
<strong>Ingredients </strong>(for 2 people):<br />
- 1 tin of green peas or 2 handful of frozen or fresh green peas<br />
- 2 carrots<br />
- 2 potatoes<br />
- 1 onion<br />
- Olive oil, salt, pepper</p>
<p>Peel the onion and cut it into thin slices. Cook them in a pan with a tablespoon of olive oil.<br />
Peel the carrots and the potatoes. Cut the carrots into coins and the potatoes into cubes. Add them to the onion, as well as the green peas.<br />
Cover with water and cook for around 10 minutes at medium heat.</p>
<p><em>Tip</em>: fry some bacon dices with the onion, it will give extra flavor to your vegetables. </p>

<strong>Cooking time</strong>: 3 minutes per piece<br />
<strong>Difficulty</strong>: Very easy<br />
<strong>Ingredients </strong> for 4 peole:<br />
- 1 fondue pan of oil<br />
- 400 gr of chicken breasts<br />
- 1 bowl of bread crumbs<br />
- 2 eggs</p>
<p>Fill in the fondue pan with oil and eat it until it is hot but not boiling.<br />
In the meantime, cut the chicken breasts into small dices.<br />
Prepare a bowl of bread crumbs and one with the eggs beaten.</p>
<p>Put the fondue pan in the middle of the table and give a fondue stick to each guest. Put the meat, the bread crumbs and the eggs on the table.<br />
Each guest will have to put a chicken dice on his stick and deep it first in the eggs, then in the bread crumbs, and finally cook it in the oil.</p>
<p>Enjoy and remember: the one who is loosing the meat on his stick as a trick!!</p>
<p><em>Tip</em>: you can skip the eggs and deep your meat directly into the bread crumbs.<br />
You can do this recipe with chicken or turkey breasts equally. </p>

			<content:encoded><![CDATA[<p>I love Asian food, that is why I wanted to share with you this spring rolls recipe. This is a vegetarian version of spring rolls, with only vegetables inside, but feel free to add chicken breast or prawns. The cooking time of the spring rolls is quick so the more important thing is to cut the ingredients into thin slices otherwise there are going to be too hard.</p>

<p><strong>Preparation time</strong>: 10 minutes<br />
<strong>Cooking time</strong>: 4 minutes each<br />
<strong>Difficulty</strong>: Easy<br />
<strong>Ingredients </strong>(for 15 spring rolls):<br />
- 15 rice leaves<br />
- 2 carrots<br />
- 1 courgette<br />
- 5 mushrooms<br />
- Fresh parsley or coriander<br />
- Ginger powder, coriander powder, paprika<br />
- Salt, pepper<br />
- Oil</p>
<p>Heat some water in a bowl.<br />
In the meantime, peel the carrots, courgette and mushrooms and cut them into thin slices. Put the vegetables into a bowl and mix them with the spices and the fresh coriander or parsley. Season with salt and pepper.<br />
Once the water is hot, dip on rice leaf into it to make it soft. Put the rice leaf on a plate and place the vegetables stuffing in the middle.<br />
Refold the left and right extremities of the rice leaf on the stuffing. Then refold the back extremity on the stuffing and roll the rice leaf with the stuffing inside until the bottom.<br />
Repeat the rice leaf stuffing operation until you are running out of stuffing.<br />
Once all the spring rolls are ready, fry them into a pan with a bit of oil. </p>
<p><em>Tips</em>: Try to eat the spring rolls rolled into a leaf of salad and a leaf of mint, and dip them into soy sauce. It’s delicious!<br />

			<content:encoded><![CDATA[<p>Christmas is in the air with this typical recipe from Alsace, a region situated in North-East of France. They prepare the Spices Bread (or pain d’épices in French) especially in the winter when they decorate it and sell it on the numerous Christmas markets. You can find different shapes of pain d’épices, more or less soft. It is the perfect cake the cold season with the mix of honey and spices. Enjoy it with a cup of tea or a glass of mulled wine!  </p>

<strong>Ingredients </strong>(for 6 people):<br />
- 250 gr of honey<br />
- 2 eggs<br />
- 1 tablespoon of vanilla sugar<br />
- 10 cl of milk<br />
- 250 gr of flour<br />
- 1 teaspoon of baking powder<br />
- 1 teaspoon of cinnamon powder<br />
- 1 teaspoon of ginger powder<br />
- 1 teaspoon of spices mix powder</p>
<p>In a bowl, mix all the ingredients together: honey, eggs, vanilla sugar, milk, flour and baking powder. Then add the spices and taste the dough to adjust their quantity according to what you like: hot or mild (be careful, the taste get stronger once the spices are cooked). </p>
<p>Cook in a oven at thermostat 160 degrees  for around 45 minutes, until the cake gets a browny colour. </p>
<p><em>Tips</em>: take liquid honey, it is easier to mix with the others ingredients.<br />
Once the spices cake is ready, wrap it in aluminium foil so the different flavours of the spices can mix together.</p>

			<content:encoded><![CDATA[<p>Eating desert without feeling guilty? This is possible with this yummy coconut cake recipe. Coconut milk is good for your health, and has it is already sweet, there is no need to had lots of extra sugar. You don’t need to had oil or fat as well, the one contained in the coconut milk is sufficient. Now you see why I called this recipe “light” coconut cake <img src='http://myfrenchcooking.com/wp-includes/images/smilies/icon_wink.gif' alt=';-)' class='wp-smiley' />  </p>

<p><strong>Preparation time</strong>: 10 minutes<br />
<strong>Cooking time</strong>: 45 minutes<br />
<strong>Difficulty</strong>: Very Easy<br />
<strong>Ingredients </strong>(for 6 people):<br />
- 20 cl of coconut milk<br />
- 2 tablespoon of sugar<br />
- 2 eggs<br />
- 200 gr of flour<br />
- 100 gr of grated coconut</p>
<p>Separate the egg yolk from the egg whites and beat the egg whites until stiff.<br />
In a bowl, mix all the ingredients together in the following order: egg yolks, sugar, coconut milk, flour and the grated coconut. Add delicately the stiff egg whites.<br />
Pour the mixture into a cake mould and cook into oven thermostat 160 degrees for around 45 minutes. </p>
<p>Eat this cake warm or cold… if it has the time to cool before you eat it all!</p>
<p><em>Tips</em>: test the cake and see if it is sweet enough for you. If not, add a tablespoon of sugar. If yes, maybe you don’t need to put any sugar at all!</p>
