Pasta with carbonara sauce

I know, this is another Italian recipe, but we really like it in France….and I am sure elsewhere too!! This recipe is originate from the beautiful city of Rome, and it’s perfect to bring some Italian’s sunshine during cold weather.

Preparation time: 10 minutes
Cooking time: 10 minutes
Difficulty: Easy
Ingredients (for 2 person):
- 200 gr of spaghetti
- 15 cl of double cream
- 160 gr of bacon dices
- 1 tablespoon of mustard
- Salt, pepper

Cook the spaghetti into a pan of hot water for around 7 minutes, until they are “al dente”.
In the meantime, prepare the carbonara sauce: fry the bacon the dices in a pan. Then add the cream and the mustard. Season with salt and pepper. Add a tablespoon of the pasta cooking water and gently cook until the sauce thickens.

When the spaghetti are ready, drain them and put them into a plate. Cover with the carbonara sauce. Buon apetito!

Tip: you can eat the carbonara pasta “Bianca” (like in this recipe) or with a fresh egg yolk that you had to the sauce when you serve the dish. You can also sparkle a bite of Parmigiano o Pecorino Romano.

Letuce, bacon, tomatoes and eggs salad

Let’s take opportunity of the extend summer to eat a delicious salad! In this one, I put some letuce, bacon, tomatoes and eggs. Feel free to add some nuts to give it a more « autumn » flavour!

Preparation time: 10 minutes
Cooking time: 10 minutes
Difficulty: Very easy
Ingredients (for 2 person):
- 1 egg
- 1 tomato
- 150 gr of bacon dices
- Letuce
- 1 slice of bread
For the French dressing:
- ½ tablespoon of Dijon mustard
- 1 tablespoon of vinegar
- 1 tablespoon of oil
- Salt, pepper

Put the egg to cook into a pan of hot water for 10 minutes.
Put the bacon dices to brown into a pan for 3 minutes.
Toast the bread.
In the meantime, arrange the letuce in a plate and add the tomato cut into slices.
When the egg is cooked, peel it and cut it into slices. Add it to the salad.
Sparkle the bacon dices and add the bread cut into dices.

For the French dressing:
Put the mustard into a bowl and mix it with the vinegar. Then add the oil and mix the French dressing until the sauce is consistent.

Pour the French dressing on the salad and enjoy!

Tip: You can snip and sparkle some chive to enhance the taste of this salad.

Fried potatoes with bacon cubes

This countryside French recipe can be served as a main dish or as an accompaniment to grilled chicken or roast beef. It is very simple to make, really tasty, and perfect for cold weather!

Preparation time: 10 minutes

Cooking time: 25 minutes

Level of difficulty: Very easy

Ingredients for 2 persons:

-          6 medium size potatoes

-          1 onion

-          150 gr. of bacon cubes

-          Butter

-          Vegetal oil

-          Salt, pepper

Peel the potatoes and cut them into cubes. Put them into a pan of hot water for 15 minutes (to know if they are ready or not, prick a piece of potato with a knife, if it is tender they are ready).

Strain  the potatoes and put in a frying pan with a spoon of butter, a spoon of vegetal oil, the onion cut into thin slices, and the bacon cubes.

Fry over a medium heat for around 10 minutes, until the bacon become crispy and the potatoes have a golden colour.
