Christmas biscuits / Christmas sablés

These Christmas biscuits / sablés are as easy to bake than to eat! And they are also fun to make alone or with children and friends! I hope that they will help creating a warm and Christmasy atmosphere inside your home!

Preparation time: 1 hour 30 minutes(10 minutes for the dough, then 1 hour rest in the fridge, and 20 minutes for making the biscuits)
Cooking time: 10 minutes in the oven thermostat 180 degrees
Difficulty: Very easy
Ingredients (for around 30 biscuits):
- 500 gr of flour
- 180 of sugar
- 2 eggs
- 250 gr of butter
- 1 teaspoon of vanilla sugar

Leave the butter out of the fridge for at least 30 minutes (better 1 hour) so it softens. If you don’t have time, just put it for 2 minutes into the microwave.

Mix all the ingredients together: flour, eggs, sugar, butter and vanilla sugar. Start with a spoon, and then mix the dough with your fingers to make it homogeneous. It needs to be a bite sticky not too much! If it sticks too much on your fingers, add a bite of flour.

Put the dough in e fridge for one hour so it will become more compact and easy to spread.

Put some flour on the table and spread the dough. It should be around 3-4 millimeters high. Take some cookie cutters and design some Christmas figures on the dough. Christmas trees, reindeers, snowmen, leave your imagination decide!

Put the little figures in a pan go into oven and cook for around 10 minutes thermostat 180 degrees (when the figures have a goldy color, they are ready!). Enjoy and have a Merry Christmas!!

Tip: you can decorate your Christmas sables with jam, icing or chocolate…. And don’t hesitate to change your cookie cutters to serve them also outside the Christmas period, they are too good to be eaten only once a year!!

Raspberry yule log

Replace the usual Christmas Pudding by a raspberry yule log. This will surprise your guests, and they will remember for years this yummy desert ! Be careful, once they will taste it, they will ask for it every Christmas !  

Preparation time: 2 hours

Cooking time: 20 minutes

Difficulty: Intermediate

Ingredients (for 4 persons):

For the biscuit:

- 3 eggs

- 125 g of caster sugar

- 100 g of flour

- 30 g of almond powder

For the decoration:

- 250 g of mascarpone

- 80 g of caster sugar

- 10 cl of single cream

- 1 teaspoon of vanilla extract

- 200 g of raspberries

- 2 eggs

Start by baking the biscuit. In a bowl, mix together the egg yolk with the sugar, the flour and the almond powder. Delicately add the stiffly beaten egg whites. Put in the oven for 20 minutes at thermostat 160 degrees. When the biscuit is done, turn it out of the mould and put it on a damp cloth. Roll it tightly in the cloth.

Prepare the decoration by mixing the single cream until it gets thick. Then add the mascarpone, the vanilla and the sugar and mix gently. Put this mascarpone cream in the fridge for 30 minutes.

Unroll the biscuit and spread on it the mascarpone cream. Add ¾ of the raspberries and keep the rest for decorating the outside of the yule log. Roll tightly the biscuit in the cloth again and put it in the fridge for 45 minutes.

Stiffly beat the two remaining egg whites and spread the mixture around the yule log. Put it in the oven on grill position at thermostat 220 degrees for 5 minutes, until the egg whites became meringue-topped.

Turkey filled with mushroom stuffing

Christmas is not Christmas without the traditional Christmas Turkey!

Preparation time: 20 minutes

Cooking time: 2 hours

Difficulty: Easy

Ingredients (for 4 persons):

-          A 3.5 kilos turkey

-          250 gr of mince pork

-          4 mushrooms

-          1 onion

-          10 cl of white wine

-          Salt, pepper

-          Parsley

Prepare the stuffing by slicing thinly the mushrooms and the onion. Mix the mushrooms and the onion with the mince pork and add the wine. Season with salt, pepper and parsley.

Put the stuffing inside the turkey, previously drawn.

Put in the oven thermostat 180 degrees for around 2 hours. To know if the turkey is ready, prick the turkey with a fork, if there is no juice coming out, the turkey is ready!

Gratin Dauphinois

Gratin dauphinois is a delicacy… more easy to cook that it looks like! You can serve it during any occasion, either for family meals or formal diners.  And it is perfect to be served with turkey for Christmas!

Preparation time: 20 minutes

Cooking time: 40 minutes

Difficulty: Easy

Ingredients (for 4 persons):

-          1 kg of potatoes

-          1 litre of milk

-          10 cl of single cream

-          1 glove of garlic

-          Salt, pepper, nutmeg

-          100 gr of grated cheddar (optional)

Peel the potatoes and cut them into thin slices. Put them in a sauce pan with the milk and the garlic and boil for 10 minutes, until the potatoes are nearly done (they need to remain a bite firm).

Strain the potatoes and put them into a tin greased with butter. Season with salt, pepper and nutmeg. You can sprinkle some grated cheddar to give a more crunchy taste. Leave in the oven at thermostat 180 degrees for 30 minutes, until the cheese is melted and has a golden colour.
