Mirabelle pie

Here is a typical recipe from Franche-Comte, a not really well-known but very pretty countryside region of north-east of France. It is made with mirabelle, a small yellow plumb with a sweet taste. Try this pie, I hope that you will like it!

Preparation time: 5 minutes
Cooking time: 30 minutes
Difficulty: Very easy
Ingredients (for 6 people):
- 1 pack of unroll puff pastry
- 650 grams of mirabelles (small yellow plumbs)

Unroll the pastry and put it in a tin. Make holes in it with a fork.
Remove the kernel of the mirabelles and put them on the tin.
Cook in the oven for around 30 minutes thermostat 210 degrees.

Tip: if you can find mirabelles, you can do this recipe with plumbs.

Abricot pie

Preparation time: 10 minutes
Cooking time: 45 minutes in the oven thermostat 200 degrees
Difficulty: Very easy
Ingredients (for 6 persons):
- 10 abricots
- 20cl of double cream
- 50 gr of sugar
- 1 tablespoon of vanilla sugar
- 2 eggs
- 250 gr of rolled puff pastry (if is quicker if you take the pastry already rolled)
- 1 tablespoon of breadcrumbs

Unroll the puff pastry and put in on a pie tin.

Spread the bradcrumbs on the pastry. It will absord some of the abricot juice so your pie will not be too dry.

Stone the abricots and arrange them, opened, on the pastry.

In a bowl, mix together the eggs, the sugar, the vanilla sugar and the cream. Pour this sauce on the abricots.

Put the pie in the oven and cook it at thermostat 200 degrees for around 45 minutes, until the sauce gets a goldy colour.

Tip: serve this pie with a scope a vanilla ice cream… it is not good for your weight, but it is really yummy for your taste buds :)

Quiche lorraine

Today I am going to share with you my recipe for one of the most famous French dish: the Quiche Lorraine. Don’t worry it is more simple to bake that it seems!

Preparation time: 10 minutes

Cooking time: 40 minutes

Difficulty: Easy

Ingredients (for 4 persons):

-          250 gr of puff pastry

-          25 cl of simple cream

-          2 eggs

-          4 slices of cooked ham

-          100 gr of cheddar or Emmental

-          Salt and pepper

Roll out the pastry and put it into a pie pan. Stud the pastry with a fork to aerate it and avoid it to rise.

In a bowl, mix the cream with the eggs. Season with a pinch of salt and pepper.

Cut the ham into dices and rape the cheese. Scatter the ham and the cheese on the pastry and cover with the cream and eggs mixture.

Cook into a hoven at 200 degrees for around 40 minutes, until the quiche Lorraine gets a golden colour.

You can serve as an appetizer cut into small pieces, or as a main dish accompanied with green salad.

Tip: You can replace the ham by bacon dices but it will make your quiche Lorraine more fatty.  You can also try with half bacon dices and half ham dices and choose your favourite option!

Provençal pie with tuna and tomatoes

This is a nice pie recipe, perfect for diner with a bite of lettuce, that will bring a bite of sunshine and South of France smell on your table!

Preparation time: 10 minutes
Cooking time: 45 minutes
Difficulty: Very easy
Ingredients (for 4 person):
- 250 gr of puff pastry (preferably already rolled to save time)
- 1 tin of tuna
- 2 tomatoes
- 1 tablespoon of Dijon mustard
- 100 gr of grated cheddar or Emmental
- Provence herbs
- Salt, pepper

Roll out the pastry and put it into a pie pan. Stud the pastry with a fork to aerate it and avoid it to rise.
Spread the mustard on the pastry. Then crumble the tuna on top of the mustard.

Cut the tomatoes into thin slices and arrange them on the tuna.
Sparkle the cheese on top of the pie, and add some Provence herbs as well as salt and pepper.

Cook into a oven at 200 degrees for around 45 minutes, until the cheese is melted and gets a golden colour.

Tip: You can replace the Dijon mustard by wholegrain mustard or black olives tapenade. Try both and let me know what you prefer!
