Bolognese sauce

Originates from Bologna in Italy, Bolognese sauce is a simple mixture including tomato sauce, minced beef and onions. Spaghetti Bolognese, lasagne, moussaka, burritos, are among the international dishes that are using Bolognese sauce as a basis, with a “local touch” to give a little variation.

Preparation time: 5 minutes
Cooking time: 20 minutes
Difficulty: Easy
Ingredients (for 2 persons):
- 150 gr of minced beef
- 25 cl of tomato sauce
- 1 onion
- 1 tablespoon of flour
- 1 pinch of sugar
- Salt, pepper, fresh parsley

Peel and slice thinly the onion. Gently cook the onion in a pan along with the beef (you don’t’ need to add oil or butter as the beef has enough fat).
Add the flour, it will give consistency to the sauce.
Add the tomato sauce and 10 cl of water. Season with salt, pepper and parsley, and add the sugar to get rid of the acidity of the tomatoes.
Cook gently the sauce at low fire. The more gently you cook it, the more tasty it will be as the flavors will have time to mix together.

Tip: try to add a carrot thinly sliced, it will give a slightly sweeter taste to your Bolognese sauce.

Provençal pie with tuna and tomatoes

This is a nice pie recipe, perfect for diner with a bite of lettuce, that will bring a bite of sunshine and South of France smell on your table!

Preparation time: 10 minutes
Cooking time: 45 minutes
Difficulty: Very easy
Ingredients (for 4 person):
- 250 gr of puff pastry (preferably already rolled to save time)
- 1 tin of tuna
- 2 tomatoes
- 1 tablespoon of Dijon mustard
- 100 gr of grated cheddar or Emmental
- Provence herbs
- Salt, pepper

Roll out the pastry and put it into a pie pan. Stud the pastry with a fork to aerate it and avoid it to rise.
Spread the mustard on the pastry. Then crumble the tuna on top of the mustard.

Cut the tomatoes into thin slices and arrange them on the tuna.
Sparkle the cheese on top of the pie, and add some Provence herbs as well as salt and pepper.

Cook into a oven at 200 degrees for around 45 minutes, until the cheese is melted and gets a golden colour.

Tip: You can replace the Dijon mustard by wholegrain mustard or black olives tapenade. Try both and let me know what you prefer!

Letuce, bacon, tomatoes and eggs salad

Let’s take opportunity of the extend summer to eat a delicious salad! In this one, I put some letuce, bacon, tomatoes and eggs. Feel free to add some nuts to give it a more « autumn » flavour!

Preparation time: 10 minutes
Cooking time: 10 minutes
Difficulty: Very easy
Ingredients (for 2 person):
- 1 egg
- 1 tomato
- 150 gr of bacon dices
- Letuce
- 1 slice of bread
For the French dressing:
- ½ tablespoon of Dijon mustard
- 1 tablespoon of vinegar
- 1 tablespoon of oil
- Salt, pepper

Put the egg to cook into a pan of hot water for 10 minutes.
Put the bacon dices to brown into a pan for 3 minutes.
Toast the bread.
In the meantime, arrange the letuce in a plate and add the tomato cut into slices.
When the egg is cooked, peel it and cut it into slices. Add it to the salad.
Sparkle the bacon dices and add the bread cut into dices.

For the French dressing:
Put the mustard into a bowl and mix it with the vinegar. Then add the oil and mix the French dressing until the sauce is consistent.

Pour the French dressing on the salad and enjoy!

Tip: You can snip and sparkle some chive to enhance the taste of this salad.
