Provençal pie with tuna and tomatoes

This is a nice pie recipe, perfect for diner with a bite of lettuce, that will bring a bite of sunshine and South of France smell on your table!

Preparation time: 10 minutes
Cooking time: 45 minutes
Difficulty: Very easy
Ingredients (for 4 person):
- 250 gr of puff pastry (preferably already rolled to save time)
- 1 tin of tuna
- 2 tomatoes
- 1 tablespoon of Dijon mustard
- 100 gr of grated cheddar or Emmental
- Provence herbs
- Salt, pepper

Roll out the pastry and put it into a pie pan. Stud the pastry with a fork to aerate it and avoid it to rise.
Spread the mustard on the pastry. Then crumble the tuna on top of the mustard.

Cut the tomatoes into thin slices and arrange them on the tuna.
Sparkle the cheese on top of the pie, and add some Provence herbs as well as salt and pepper.

Cook into a oven at 200 degrees for around 45 minutes, until the cheese is melted and gets a golden colour.

Tip: You can replace the Dijon mustard by wholegrain mustard or black olives tapenade. Try both and let me know what you prefer!
