Steamed artichoke

Artichoke are really tasty, but you never know how to cook them! Well, the simplest the better ;-)

Preparation time: 2 minutes
Cooking time: 40 minutes
Difficulty: Very easy
Ingredients (for 1 people):
- 2 artichoke

Cut the foot of the artichoke and open slightly the leaves.
Put the artichoke to cook for around 40 minutes in steamed cooker.

Tip: eat with french dressing.

Quinoa with vegetables and chicken

Quinoa is a kind of grain from South America. It is a good source of fiber, phosporus, magnesium, iron and calcium, as well as gluten-free. Not only it is a good aliment for your health, it is also tasty and easy to cook. My daughter and I love it! And you?

Preparation time: 10 minutes
Cooking time: 20 minutes
Difficulty: Very Easy
Ingredients (for 2 people):
- 250 gr of chicken breast
- 1 courgette
- 2 carrots
- 10 flat green beans
- 150 gr of quinoa
- 1 teaspoon of all purpose seasoning spices
- salt, pepper

Cut into small cubes the carrots and the courgette. Cut the flat green beans into medium rectangles.
Put the vegetables and the quinoa into a rice cooker or a saucepan and cover with water. Add the spices and cook for around 20 minutes.

In the meantime, cut the chicken into small dices and fry it in a pan.

Once cooked, mix the quinoa and vegetables with the chicken.

Tips: you can also out shrimps instead of the chicken for a vegetarian version of this dish.

Smoked turkey tartine on almond butter

 Smoked turkey tartine is the perfect appetizer for warm days or barbecues. It is stylish, healthy, and of course very tasty!

 

Preparation time: 20 minutes

Difficulty: Easy

Ingredients (for 4 tartines):

-          4 slices of crisp bread (like Wasa)

-          4 teaspoons of almond butter (available in health shops)

-          4 slices of smoked turkey

-          1 carrot

-          2 cherry tomatoes

Spread a teaspoon of almond butter in each slice of crisp bread. Then put on top of the almond butter a slice of smoked turkey.

Peel the carrot and cut it into small strips. Put a strip on the top of each tartine as well as haf of a cherry tomato.

It’s already ready to eat!!

PS: You can add a leaf of salad between the smoked turkey and the carrot, as well as a leaf of parsley or chive for decoration.

Stuffed vegetables

This recipe comes directly from South of France (Provence to be precise) and will make you use delicious summer vegetables: courgette, green/red pepper and tomatoes! A bite of colour to celebrate the return of the sun!

Preparation time: 20 minutes

Cooking time: 1 hour

Difficulty: Easy

Ingredients (for 2 people):

-          2 tomatoes

-          1 large courgette

-          1 green pepper

-          1 red pepper

-          250 gr of minced beef

-          1 onion

-          Salt, pepper

-          Olive oil

Clean the vegetables and cut them in 2/3. Scoop out the inside of the bigger part, you will use the small part to cover it.

Prepare the stuffing by mixing the minced beef with the onion cut into thin slices. Season with salt and pepper.

Out the stuffing inside the big part of the vegetables and cover with the small part.

Put into a tin a cover with a dash of olive oil.

Cook in the hoven for around 1 hour. You can serve the stuffed vegetables alone or with rice.
