Vegetable mix soup

16 mar

It’s nearly spring, but it’s still freezing outside! So why don’t trying this vegetable soup that will keep you warm until spring arrives?

Preparation time: 10 minutes

Cooking time: 30 minutes

Difficulty: Very Easy

Ingredients (for 2 people):

-          2 potatoes

-          2 carrots

-          1 handful of French beans

-          1 leek

-          100 gr of pumpkin

Peel, rinse and cut into medium size cubs the vegetables. Out them in a pan and cover with water.

Cook over a gentle heat for around 30 minutes, until the carrots and potatoes are soft.

Strain the vegetables and keep the broth aside.

Mix the vegetable together. You can add a bite of  broth if the mixture is too thick (you can use the rest of the vegetable broth to make a yummy vermicelli soup: http://myfrenchcooking.com/2011/02/04/pasta-soup/).

You can eat your vegetable soup alone or accompanied with minced beef (kids love it!).
